Mountain Shadow Gruel

After Christian went to the school district 5th grade camp out, he was so excited to share this recipe.  It is a fun special occasion breakfast.  He even takes it cold for his lunch at school.

4 cups boiling water
3 cups Old Fashioned Oats
1 t Salt
1 Stick Butter
1/4 c Brown Sugar
1 can Sweet and Condensed  Milk
1 T Vanilla
2 cups Milk (or half and half)

Bring water to rolling boil.  Add salt, then add butter and finally oats to the water.  Cook for 1 or two minutes.  Turn off heat.  Add the rest of the ingredients in order listed.

Zucchini Bread

2 c. sugar
1/2 c. butter
1/2 c. pureed white beans
2 c. shredded zucchini
1/2c.  yogurt
4 eggs
3 c. whole wheat flour (you can use part wheat flour)
2 t. baking soda
2 t. vanilla
1 t. salt
3 t. cinnamon
Milk or cinnamon chocolate chips (I used cinnamon and loved it!) 
Cream butter and sugar together until smooth. Beat in the eggs and add the soda and sour cream, Combine the batter together and then add the flour and the rest of the ingredients. Grease and flour three bread loaf pans (you can have one super full bread loaf or two smaller loaves..take your pick). Bake the bread at 350 for 1 hour (plus or minus a few minutes depending how thick your bread is). Once the bread is done, let it rest on the counter for 10 minutes and then knife around the loaf of bread and turn over on the counter to cool.

Broccoli-Rice Bake with Coconut Curry Sauce

2 C brown rice, rinsed well
4 C water
1 can (14 oz.) coconut milk
1 Tbsp. cornstarch
1 Tbsp. curry powder
½ C chopped cilantro
2 tomatoes, chopped
1½ tsp. sea salt
Mixed vegetables - see below
2 Tbsp. coconut oil
Bring the water and rice to a boil, turn down to medium low, cover, and simmer for 45 min. In a frying pan, lightly sauté harder veggies on medium high for 5 min., then add softer/smaller veggies and sauté another 2 min. In a blender, blend coconut milk, cornstarch, curry powder, and salt. Add the blend to a small pan.  Heat on medium high, stirring frequently, gradually reducing to a simmer until sauce is thickened.
Keep brown rice, veggies and curry sauce separate and let kids assemble themselves.
Garnish with the tomato, and cilantro. Serve hot. Serves 6-8.

I used 1 crown of broccoli, 1 zucchini (cut in large julienne slices), 10 baby carrots cut in sticks, 1/2 red bell pepper, 1/2 yellow pepper


3 stems of broccoli (including most of stalk), cut into bite-sized pieces
8 oz. mushrooms, washed well and cut in thirds

Chocolate Chip Oatmeal Muffins


Oatmeal Muffins Directions:
2 c. mashed bananas
2 eggs
1/2 c. applesauce
1/2 c. oil (coconut)
1 c. brown sugar
1 1/2 t. baking soda
1 1/2 t. salt
1 t. nutmeg
3 t. cinnamon
2 c. oats
3 c. wheat flour (or more white flour)
1 1/2 c. chocolate chips
Mix together the smashed bananas, eggs, applesauce, oil and brown
sugar. Add the remaining ingredients and mix until combined. Bake
in lined muffin tins at 350 for 15-17 minutes, or until muffins are
cooked through and lightly golden brown.

Green Smoothie Girl Favorite Salad

Spinach-Orzo Ensalata
1 cup uncooked whole-wheat orzo pasta (boil in 3+ cups water, approx. 6-7 min., and rinse well to keep grains separate, then cool)
10+ cups spinach (about two 10-oz. bags), chopped
1 pkg. fresh basil, cut in ribbons
2 tomatoes, diced small
1 can black olives, sliced
2 oz. capers (half a 4 oz jar), drained
½ cup raw pine nuts (or toast them under the broiler—yum!)
Optional: shaved Parmesan to taste
Toss all ingredients except optional Parmesan. Add dressing to taste and toss. Top each plate with shaved Parmesan if desired. Serves 4 as a complete meal.
Tangy Dill Dressing
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
1/2 cup extra virgin olive oil
2 Tbsp. Bragg Liquid Aminos
1/4 cup raw apple cider vinegar
2 Tbsp. honey (raw)
2 garlic cloves
1 Tbsp. dried (or 1/4 cup fresh) dill weed
Blend all ingredients well in a high-powered blender.

Favorite Granola

5 cups old fashioned oatmeal
1 cup chia / sesame seeds
1 cup sunflower seeds / pumpkin
1 cup wheat germ
1 cup coconut flour
1cup almond meal
1 cup coconut
1 cup nuts
1/2 teas salt
mix 1 cup coconut oil, 1 cup water, 1 cup honey
stir together, spread on cookie sheet, bake at 300 until it turn golden brown.

Bourbon Chicken

Every Single Person in my family liked this chicken. It is different from other Bourbon Chicken Recipes that I've tried because it has a bit of a kick. Another option would be to put it in the crock pot for a few hours and then cook over rice. Serve with rice and cauliflower.


2 lb. boneless skinless chicken breasts
4 T. oil (for pan frying)
Cornstarch (for dusting, optional)
Sauce:
1 garlic clove, minced
1/4 t. ginger (fresh or powdered)
Dash crushed red pepper flakes
1/4 c. apple juice
1/3 c. brown sugar
3 T. ketchup
1 T. apple cider vinegar
1/2 c. water
1/3 c. soy sauce
